Make white wine and soup to 1/4 of the original mass. Peel the potatoes and make them in salted water. In a large frying pan (or saucepan) heat 1 tbsp butter, cook the washed and cleaned spinach leaves, stirring frequently, until they collapse. Season with freshly grated nutmeg, pepper, salt. Almost all the cream (save 4 tbsp) to white wine reduction form, make the sauce to creamy consistency. Cut salmon fillet into narrow slices. Butter a gratin dish and spread with spinach. Place salmon slices on top of spinach. Whip 4 tbsp. cream until stiff and mix into the overcooled sauce. Pour sauce over salmon.
