A great cake recipe for any occasion:

For lemon filling, place all ingredients except butter in water bath over gently boiling tap water. Stir constantly for 8-10 minutes until mixture thickens. Remove from the heat and add the butter.

Allow the filling to cool. Place the bottom cake layer, top side down, on a cake plate. When the filling has cooled, spread it on the bottom of the cake layer. Place the top cake layer on top, top side up.

To prepare frosting, place all ingredients except vanilla and coconut flakes in water bath over strong boiling tap water. Whisk for 7 min until glaze is stiff. Remove from heat and add vanilla. Spread the glaze on the top and sides of the cake. Sprinkle with coconut flakes, pressing the flakes down on the sides.
