Remove the peel from the shallot and garlic and chop. Rinse and dice the zucchini. Saute in butter with garlic and shallot until soft and liquid has completely evaporated. Now crush. Mix with the fresh cream and season heartily with salt, pepper and nutmeg. Mix the eggs and stir into the zucchini mixture together with the tarragon.

Then fill into small buttered ramekins, put into a water bath and cook at 150 degrees in the stove for about 30 minutes. If you like, you can also add grated Gruyère.
