Wild Boar Chops with Oranges

Instructions:

Rinse and dry the chops. Rinse, clean and chop the celery. Peel and dice the onion. Wash the one third of the oranges hot, rub dry and separate the peel with a zester. Peel all oranges thickly and fillet, reserving juice.

Heat clarified butter, roast chops in it on both sides for 3 minutes each. Keep warm.

Sweat onion and celery in drippings, extinguish with orange juice and double cream. Cover and steam for 5 minutes. Add orange fillets and peppercorns, steam for another 3 min.

Season wild boar chops and vegetables with salt and serve together. Sprinkle with the orange peel.
