For the dough of the vegetable strudel with herb sauce – Mediterranean: Boil the potatoes until soft, peel and cut into cubes. Chop the onion, carrots, peppers, zucchini and mushrooms, then chop the garlic and fry them in a pan, a little at a time, according to the cooking time.
Put the potatoes in a bowl with the roasted vegetables. Cut the feta and mozzarella into cubes, then cut dried tomatoes into thin strips and mix everything in the bowl. Season the mix with plenty of herbs and season with salt and pepper.
Roll out the puff pastry on a suitable tray and fill with the vegetables. Close the dough well, brush with a little cold water and bake in a preheated oven at 180°C until golden brown.
For the herb sauce: mix sour cream and yogurt with a dash of vinegar until smooth, add some of the herb mix and season with salt and pepper.
