For the filling the apple or pear strudel peel, core and quarter the apples (or pears). Cut into 5 mm thick slices and steam with cinnamon, lemon juice, raisins, rum and a little sugar for about 15 minutes. After steaming, drain apple mixture well and let cool.

Draw out prepared strudel dough on a floured cloth or spread dough sheets on a moistened cloth. Brush entire surface with melted butter and spread apple filling over first third of dough surface. Roll up the strudel and brush with melted butter in between and with egg yolk at the end. Close the ends well.

Lift the strudel with the help of the cloth onto a buttered baking tray. Prick the strudel with a needle and bake in a preheated oven at 200 °C for about 20-25 minutes. Allow the apple or pear strudel to cool slightly, cut into diagonal pieces and serve lukewarm sprinkled with powdered sugar.
