The veal can also be replaced by chicken or turkey breast – all these meats cook very quickly and absorb flavors well. Instead of clear soup, you can also use wine – or possibly a mixture of clear soup and wine.

Cut the meat slices into an even shape. Heat 45 g butter in a large frying pan and fry ham for a few minutes. Season the meat and dust with flour, then brown on both sides in the same frying pan. Remove from the frying pan and keep warm. Add the remaining butter to the frying pan and stir to remove the drippings. Add parsley and juice of one lemon, let it bubble up, pour it over the meat and bring it to the table on the spot.

Tip: It is best to use your favorite ham – then your dish will taste twice as good!
