Finely dice the bacon and onion and sauté in clarified butter. Cut the pre-cooked potatoes and the sausages into slices and roast them in the frying pan until golden brown. Season with marjoram, thyme, garlic salt and ground pepper.

Chop the pickles and stir them into the sausages together with the herbs.

Finally, beat the eggs with a fork or whisk and pour over the sausage mixture.

Lightly poke, push together to form an omelet and arrange nicely on plates.

Sprinkle with chives and garnish with cucumber fans.
