A simple but delicious cake recipe:
Sift the flour onto the surface, pile it up and press a bulge into it. Pour in egg yolks, eggs, powdered sugar, butter, lemon zest and orange juice and knead all ingredients into a soft, smooth dough. Rest for 10 min. With floured hands, shape dough into finger-thick rolls and cut into small pieces 1 to 2 cm long. Rest again for 5 minutes. Fry the struffoli in enough hot oil until golden brown and drain on kitchen paper. Heat the honey in a small pot. As soon as it is thin, pour in candied orange peel and candied lemon peel. Place the struffoli in a large enough bowl, pour the honey mixture over them and mix well without damaging the balls. With wet hands, pile the struffoli on a plate to form a kind of pyramid. Leave to rest for a few hours or, better, a day before serving. Note: This traditional dessert from the south of Italy is served in Campania and Abruzzo, especially at Christmas.
