For the apple compote, peel the apples, remove the core, quarter and slice.
Grate the lemon peel and squeeze the lemons. Boil sugar, water, wine, cinnamon, star anise, lemon peel and lemon juice together.
Add apples and let everything cool down again together. Boil down for half an hour at 90°C in a preserving machine.
Serve the apple compote.
