For semolina flummery with bock beer sabayon, bring milk to a boil with a pinch of salt and the vanilla pod. Remove the vanilla pod again, add the semolina and cook for about 5 minutes until a creamy mass. Soak gelatine in cold water, squeeze out and stir into the still hot semolina mixture. Then let it cool down.
Beat egg yolks with sugar until foamy and mix into semolina mixture together with vanilla sugar and orange juice. Finally, mix in the whipped cream.
Pour the mixture into suitable molds or mocha cups and refrigerate for a few hours. For the bock beer sabayon, whip all ingredients in a kettle over hot steam until fluffy. Turn out semolina flummery before serving and top with prepared bock beer sabayon.
