Gut the herrings and rinse them. Put a layer of salt in a large bowl, place herring close together on top, then repeat a layer of salt, then herring on top of that, etc. Sprinkle salt thickly over top fish. Stand for 24 hours.
Then rinse herring, debone, cut in half lengthwise. Place skin side down on a work surface. Place mustard seeds, 1 piece of onion and 1 piece of pickle on each herring fillet, roll up, pin with a toothpick. Place rolled herring in a large enough bowl, top with onion slices, pepper and allspice corns, bay leaves and mustard seeds. Make a mixture of 2/3 vinegar, one-third water and 2 str. tsp. sugar, pour uncooked over the rollmeats form. Let stand for 3 days.
