For Swedish fork bites, first put the salted herrings in water for 2 days, changing the water often. Then skin, bone, fillet and cut into thumb-wide strips.

Layer in a shallow dish. Put vinegar in a pot with juniper berries, pepper and pimento seeds, sugar, bay leaves and onion rings. Bring to a boil. Then allow to cool.

Pour the broth over the herrings. They should be completely covered. Leave to infuse overnight.

The next day, mix the sour cream with dill, parsley and pickles. Lift the herrings out of the broth. Serve with the sour cream mixture as Swedish fork bites.
