The meat is cut lengthwise so that it can be pounded into a large slice. This is topped with thin slices of smoked bacon, sprinkled with salt, paprika and pepper and rolled up tightly. The meat is wrapped with twine or pinned together with roulade needles. Put it on an ovenproof plate, pour hot fat over it and roast it in the oven for 40 minutes. It is proper if it is cooked only halfway through and the inside remains a little bit bloody. It is served with boiled corn porridge (polenta).

Our tip: use bacon with a subtle smoky touch!
