Score pork rind crosswise from roast. Rub roast with salt, lard with cloves, place rind side up on broiler, place in oven with fat pan underneath, 1/2 cup water in fat pan form.

Circuit: 180 to 200 °C , 2nd slide bar v. U.

160 to 180 degrees , convection oven 90 to 100 min.

Calculate 18 min cooking time per cm height of the meat. Next, remove the roast from the stove. Rest for 10 min with the lid closed before slicing. Pour a little water into the pan, loosen the meat stock with a roasting brush and add to the turnip vegetables or make a gravy. This is served with a turnip-porridge dish.
