For the rice casserole, put the milk and rice and a little salt and sugar in a saucepan and then chill.
Mix the yolks with butter, sugar and a pinch of salt nicely and then fold in the snow. Then mix with the cooled rice.
Brush the mold with butter and pour in the mixture. Bake the rice casserole for 1 hour at 190-200 degrees (top bottom heat).
