Dice the meat. Prepare a marinade from the ingredients listed, pour over the meat and leave to marinate in the refrigerator for 12 hours with the lid closed.
Cut bacon and onions into cubes, carrots and potatoes into slices, leek into strips. Blanch tomatoes, peel and cut into slices. Halve and pit olives, cut chives into rolls. Spread bacon evenly in a large roasting pan, add prepared ingredients and meat with marinade on top.
Season with rosemary and marjoram. Place the closed roaster in the cold oven.
