For the prince’s roulade, fry half of the onion with the gherkins, thicken with a tablespoon of crème fraîche and leave to cool.

Beat the cutlets, season with salt and pepper, spread with mustard, place the ham on top, spread the onion mixture on top and place the fillet on top. Roll the roulade, tie, wrap in plastic wrap and refrigerate for 2 hours.

Flour the roulades and fry all around, add carrots, onion and celery and fry briefly. Deglaze with 1 l beef broth and roast in the oven at 180° for about 90 minutes. Cover the first 45 minutes, then cover and turn the roulades frequently. Remove the roulades and strain the sauce through a sieve. Thicken with creme fraiche and season to taste. Serve the roulade with the sauce.
