Cut potatoes into coarse cubes, make, steam well and press through potato ricer. Peel and finely dice shallots, sauté in butter until translucent. Chervil, egg yolk, shallots stir into the potato mixture, form s+p. 12 small balls and press evenly ( put on oiled board until frying, cover ). Roast cookies in clarified butter in about 6 min. until brown, bring to table with monkfish medallions.
