Pork Chops with Broccoli, Peas and Rice

Instructions:

For the pork chops with broccoli, peas and rice, first coarsely grind thyme, rosemary, garlic and chili with the olive oil for the meat, rub the pork with it and let it marinate for about 30 minutes.

Bring the rice to a boil along with the oil, salt, curry powder and water and cook over low heat until tender.

Sear the meat in a hot cast iron grill pan for about 2 minutes on both sides. Either wrap in aluminum foil or let rest in the oven at 50 °C for about 5 minutes.

In the meantime, separate the broccoli florets. Bring a pot with plenty of water and 2 tablespoons of salt to a boil and cook the broccoli in it until al dente. Just before the rice is ready, put the lemon juice, chili, mint, peas, shallot and olive oil in a bowl. Add the broccoli to the bowl and season with a little salt and pepper.

Arrange the pork chops with broccoli, peas and rice and serve.
