Season the tuna with salt, pepper and Dijon mustard, sear in a pan with oil. Let rest.Wash the bell bell pepper and zucchini, then cut into strips. Peel the ginger and cut it into small pieces. Heat some olive oil in a pan, fry bean sprouts, peppers and zucchini briefly, add ginger, remove from heat, deglaze with soy sauce and transfer to another container to prevent re-drawing.Just before serving, mix in the freshly chopped cilantro and toasted sesame seeds.For the balsamic sauce, boil the vinegar with the same amount of granulated sugar briefly over low heat to reduce slightly. Cut the tuna into slices and fry in a little butter with rosemary.Arrange on the sesame vegetables and garnish with the sauce.
