Clean and rinse the strawberries, halve or quarter the larger ones. Cut out wheels of cheese about 2 cm in diameter with a cookie cutter. (Discard leftover cheese for another dish.) Arrange on four serving plates and sprinkle with coarsely ground pepper. For the dressing, stir through sherry, maple syrup, juice of one lemon, iodized salt and perhaps 2 tbsp water. Pour over fruit, let sit for 15min. Before serving, sprinkle with washed, plucked lemon balm leaves. Toasted toast is a good accompaniment.
