For the pasta dough without egg, mix flour, semolina and a touch of salt. Make a dent and pour water into it. Knead from the center until a smooth dough is formed. Wrap the dough in plastic wrap and let it rest for 1 hour.
Then pull the dough through the pasta machine until it is thin enough and, if desired, cut the pasta dough without egg into ribbon noodles, spaghetti or other types of pasta.
