Instructions:

First knead all the ingredients well, the dough should not be too soft (if you prepare the pasta dough in advance, then do not add salt).

Form 2 to 3 loaves from the dough, roll them out thinly and let them rest on a kitchen towel for about 30 minutes.

Cut as desired: very fine soup noodles, ribbon noodles, tagliatelle, fleckerln, lasagna sheets, etc.

1 bunch of parsley or other mixed herbs finely chopped = herb noodles

20 g tomato paste = tomato noodles 1 tsp saffron dissolved in hot water = saffron noodles
