A great do-it-yourself fish recipe:
In a large baking bowl, stir through chicken, lemongrass, sugar, garlic clove, ginger, paradeis pulp, chili and turmeric. Cover and let cool for 1 hour.
Heat oil in a wok or large skillet over high heat until hot. Pour in meat mixture and stir until chicken is crispy. Add remaining ingredients and half of the clear soup and simmer until onion is soft. Add the remaining clear soup and reduce the heat.
Serve on a bed of white long grain rice.
