Sauce: Stir all ingredients well.
Chicken salad: Season chicken breasts, brush with the oil. Steam in a steamer basket with the lid closed for about 20 minutes, remove. Cut into strips, baste with sauce, keep warm. Pak choi or lettuce leaves collapse in steamer basket with lid closed for about 3 min.
Serve: Arrange pak choi or lettuce on hot plates, top with chicken salad. Spread papaya evenly on top.
