Prepare the dough for the liver cheese strudel.

Sauté garlic and onion cubes until light. Remove from heat and allow to cool slightly. Mix with the remaining ingredients and season to taste. (If the mixture is too soft, bind with breadcrumbs).

Preheat oven to 165-185°C hot air. Butter a baking pan or tray or line with baking paper. Roll out the shortcrust pastry (or pull out strudel pastry), fill as described and form into a strudel. Place on the baking sheet, brush with egg and bake for about 30-35 minutes.
