For the cinnamon vanilla syrup, heat the sugar in a saucepan, stirring until it has dissolved. Deglaze with water and bring the mixture to the boil until the solid caramel has dissolved again.

Add cinnamon sticks and vanilla pulp and simmer gently for 20 minutes. Pour the syrup together with the cinnamon sticks into cold rinsed bottles and close tightly.
