Lemon sole : Lemon sole belongs to the family of shallow fishes. It lives in the North Sea from the English Channel to the Northeast Atlantic. Limande can be found in the market mainly as fillets.

Preparation :

Fillet the salmon.

Soak the white bread in a little bit of whipped cream or tap water. Pluck the dill.

Season the lime fillets with salt and pepper and place them on a grid or possibly in a bamboo basket.

Preparation :

Whisk the salmon fillet with the squeezed white bread and spicesin a hand mixer. Pour the farce into baking dish and fold in the whipped cream. Use a piping bag to pipe the salmon farce onto the lime fillets. Steam for about 5-6 minutes. Add keta caviar to the fish stock.

Place the fish pieces on the sauce on the table.

Serve with boiled potatoes, rice or gnocchi with freshly grated Parmesan.

Tip: Always use aromatic spices to refine your dishes!
