For the Leerdammer rolls with date-celery filling, rinse the celery stalks with cold water and rub dry, cut away the woody ends, and cut the stalks into thin slices. Chop the dates very finely.

Mix the date and celery pieces with the salted cream cheese. Place the Leerdammer sheets on top and spread a strip of filling in the lower third of the sheet. Roll up the cheese leaves and tie tightly with chive stalks. Spread some more filling mixture on the ends of the rolls.

Place the Leerdammer rolls with date-celery filling on plates and garnish with chive rolls.
