Mix flour, yeast and water. Cover with plastic wrap and let rest in the refrigerator overnight.
For the dough, knead the given ingredients, 125 ml ice-cold water and the pre-dough on low speed for about 10 minutes, then on higher speed for another 10 minutes until a smooth dough is formed.
Place the dough in a large mold greased with oil and press it flat (about 5 cm high). Cover the mold with plastic wrap and let the dough rise for about 4 hours.
Preheat the oven to 240 °C. Turn the dough out onto the work surface sprayed with water.
With slightly moistened hands, cut off 12 dough portions of about 100 g, shape into balls and place on baking paper.
Bake the knauzes together with the baking paper in the oven for about 25 minutes until light brown.
