For the herring salad, soak the herring in cold water for a few hours, changing the water frequently. Clean the herring, cut into small pieces.
Boil kipfler, rinse, peel. Peel and core apples. Dice pickled gherkins. Chop capers. Put all ingredients in a bowl.
Mix oil, sour cream and vinegar, mix with the beans and the rest of the ingredients and let the herring salad stand for at least 2 hours.
