First prepare the dough. To do this, mix both types of flour, knead with water, oil and salt until a smooth dough.
Roll out the dough thinly and place it on a baking tray covered with baking paper. Spread with crème fraiche. Finely chop the sage and spread it on top.
Cut the pears into slices and layer on top. Spread the gorgonzola on top. Coarsely chop the walnuts and sprinkle on top as well.
Bake at 200 °C for approx. 20 minutes.
