For the Healthy Cake, mix all ingredients for batter 1 in a bowl. Separate the egg, add the yolk to the remaining ingredients and beat the egg white in a separate bowl for 3-5 minutes until very stiff, then fold the beaten egg white into the batter.
Preheat the oven to 170 °C and grease a 16cm diameter mold and cover with spelt flour. Pour in the dough and bake for 10-20 minutes. After 10 minutes, test the dough with a wooden stick to see if it is done.
Repeat exactly the same with dough 2.
For the cream, beat the Rama Creme Fine until stiff and stir in the remaining ingredients, except the gelatin powder.
Prepare the gelatin as described on the package and gradually stir into the cream. Allow the cream to thicken slightly and spread generously on a cake base.
Place in the refrigerator for 20 minutes and then place the second cake layer on top. Heat the jam and spread it thinly on the cake.
Wash the berries and place them on top.
