Peel the potatoes and cook them in boiling salted water. Drain and press through a potato ricer. Add butter, egg yolks, onion, lemon zest and juice, yogurt and freshly chopped parsley gradually, squeezing and adding garlic and seasoning with salt.

Serve garnished with black olives.

Tip: Use creamy natural yogurt for an even finer result!
