For the Greek rice salad, prepare the rice in salted water according to instructions. Peel and finely dice the onion and cucumber. Wash and finely dice the bell bell pepper.

Cut the cheese into cubes and the olives into fine slices. Peel the garlic, cut it very finely and mix it with salt, pepper, some sugar, vinegar and oil.

Pour the marinade over the salad and fold in. Sprinkle the Greek rice salad with the chopped parsley and serve.
