Try this delicious pasta dish:
Soak morels in lukewarm water and drain after 30 min.
Soak glass noodles in hot water for about 10 min, drain in a fine sieve and cut into pieces about 2 cm long with kitchen scissors.
Clean and rinse chicken gizzards thoroughly, dry and cut into fine slices.
Remove the skin from the onion and cut into fine slices.
Briefly rinse and dry the shallot garlic and coriander and chop finely.
Heat oil in frying pan, add salt and a few slices of onion and toss until they turn brown.
Add chicken gizzards and toss for about 2 minutes.
Add glass noodles to skillet along with clear soup, nuoc mam sauce, garlic, remaining onion, pepper and salt.
Let everything bubble up and toss constantly for about 3 minutes.
Add the morels only at the end and toss everything together for another minute.
Serving: Fill the dish on the serving plate, sprinkle with cilantro and scallion garlic.
Eating: Long grain rice is not served with this dish.
Drinks: Herbal tea
Tips: Glass noodle dishes must be served hot immediately after cooking, otherwise the glass noodles will disintegrate and become mushy.
