For the glass noodle soup, cut the chicken into strips. Slice the Chinese cabbage and spinach. Bring the soup to a boil.

Cook the meat, noodles, fish sauce, lime juice for 5 minutes, add the spinach, leeks, Chinese cabbage and simmer for another 5 minutes. Season the glass noodle soup with chili and serve.
