For the fried fish in welsch sauce, soak the raisins in the white wine. Finely chop the onion and sauté. Lightly roast the grated hazelnuts and add to the onions.
Pour in the wine and raisins. Keep a few raisins for garnish. Season with the spices and add the garlic. Season with honey, salt and pepper. Add lemon as needed. It should taste slightly sour.
Bring everything to the boil briefly. Stir in ice cold butter. Salt and flour the fish. Fry in hot butter. Pour the sauce over it, add the raisins and serve the fried fish in welsch sauce.
