For the elderflowers in batter, stir together a batter from milk, egg, flour, sugar and salt. Cut the elderflowers into small blossoms and add to the batter, folding well.
Heat clarified butter in a pan and using a tablespoon, place small mounds in the pan and flatten with the back of a spoon. Fry until golden brown on both sides.
Drain the elderflowers in batter on kitchen paper and sprinkle with powdered sugar.
