For the egg sandwiches, butter toast and cut in half. Place salmon on toast halves.
Hard boil eggs, rinse, peel and cut in half lengthwise. Place egg halves, cut side down, on top of salmon.
Cut a small notch in the top of each egg half and fill with caviar. Squirt small dabs of mayonnaise all around the egg halves.
Arrange egg sandwiches garnished with parsley.
