Instructions:

Sauté the onion cubes in the butter without color. Season with salt, pepper and nutmeg (freshly grated). Rinse and clean the leek. Remove the peel from the potatoes and cut them into cubes. Add both to the onions in the saucepan, sauté briefly, extinguish with the white wine and fill up with the clear soup. Soften everything and blend with a hand blender. Add the whipped cream and crème fraîche and blend repeatedly. Season to taste with salt, pepper and a pinch of nutmeg.

Fill the potato soup into plates. Arrange the shrimps in it and garnish with the vegetable straw and plucked chervil leaves.

Vegetable straw: Cut the carrots and celery into small slices (best done with a slicer). Use the green part of the leek. Cut the individual leaves into pieces about 6 cm long, lay them flat, cut them in half and then cut all three vegetables into very fine strips. Heat the clarified butter and fry the vegetable strips in it until they are done. Drain on a kitchen towel and season with salt.
