Aspic Cooked boiled beef cut into small cubes. Blanch carrots, celery and leek and dice as well. Mix agar agar powder in the clear soup with the white wine vinegar.

Place a layer of boiled beef in a small glass jar. Pour a small amount of clear soup gently. Wait briefly for the clear soup to set, then add a layer of vegetables, gently pour clear soup, and so on until the jar is full. Set in the refrigerator for about 120 minutes.

Carefully loosen the edge of the Tafelspitzsülze from the vessel with a kitchen knife and invert directly in the beer garden.
