For the vegetable soup, first sauté the finely chopped onion in a little oil until translucent. Peel and slice the carrots. Cut the celery into very small pieces. Fry both well.

Meanwhile, divide the cauliflower and broccoli into small florets, wash and add. Finely chop the parsley and fry. Stir in tomato paste and add water. Add the rosemary sprig.

Cut the potatoes into small pieces and add to the soup – cook until soft. Season with salt and pepper and serve the vegetable soup.
