For the cream of potato soup, coarsely chop the potatoes, carrots, onion, garlic and porcini mushrooms and bring to the boil in the vegetable soup together with the spices (bay leaf, salt, pepper and porcini mushroom powder) and then simmer at medium heat for 40 minutes.

After the cooking time, remove the bay leaf and puree the soup with a blender. Add the whipped cream and bring to the boil again. Serve the soup hot and garnished with a little chives.
