Whip egg whites until very stiff, adding salt, vanilla sugar, sugar and juice of one lemon.Mix almond kernels, cinnamon and coffee powder and gently fold in.

Using two teaspoons, place macaroons on a baking sheet lined with parchment paper. Sprinkle a few flaked almonds on each macaroon and bake in a heated oven at 150 °C (U: 130 °C /G: level 2-3) for about 25 minutes.
