Ready-made chocolate icing (to be dissolved in a water bath).
Place flour, butter or possibly light butter in sugar, flakes, egg yolks, lemon zest and cinnamon in a large enough bowl. Quickly knead ingredients together into a smooth, pliable dough. Roll out thinly on a floured surface. Cut out flower shapes from the dough. Place on a greased baking sheet. For the nut balls, whip the egg whites with the sifted powdered sugar until creamy. Add the nuts and the rum. Add enough of the breadcrumbs to make a firm mixture. Form small balls and place them in the center of the dough flowers. Put the baking tray into the oven heated to 175 °C and bake the Christmas roses for about ten minutes until light yellow.
After cooling, brush the edges of the Christmas roses with dissolved chocolate icing. Dry.
