A great cake recipe for any occasion:

Eivors Apelsinkaka (Eivor’s Orange Cake).

Beat butter and sugar until thick and mixture is soft and pale. Add the eggs one at a time, beating vigorously. Fold in the grated lemon zest with the orange juice. Then mix the flour with the baking powder and stir it leisurely into the mixture. Grease a loaf pan with butter and sprinkle with breadcrumbs. Fill the dough into the form. Place in the cold oven, heat to 170-180 degrees (gas mark 3) and bake for 1 hour. Turn out and cool under the mold. Dust with powdered sugar. Serve with coffee or as a dessert.
