For the chicken preserves soup, lightly brown onions in a pot, add chopped vegetables and half the chicken.

Add water, season and simmer soup lightly for 2 1/2 hours. Melt butter, dust with flour, let it color slightly.

Pour in 1500 ml of soup, add the cream, simmer gently for 10-15 minutes, remove the meat from the bones. Cut into small pieces and add to the soup with fresh parsley.
