Instructions:

For the dough, whisk flour and salt, form a well.

Let the yeast dissolve in a little milk water and pour in the remaining liquid. Knead into a smooth dough.

Cover and let rise at room temperature until double.

Pear filling

Boil wine, juice of one lemon and sugar.

Add pears, cover and simmer at low temperature for 3 to 5 minutes.

Cool in the broth Cheese filling

Mix all ingredients, season Cake layers

Roll out dough on little flour to a rectangle. Cut 4 rectangles of 15 x 8 cm per cake pan (quiche pan).

Layer dough, pears and cheese filling in the molds lined with parchment paper, ending with dough.

Cover and let rise for 45 to 60 minutes.

Brush with egg yolk and sprinkle with lemon pepper.

Bake the cake

Bake in the lower part of the oven heated to 200 °C for about 35 min. When warm, cut into slices and enjoy with a cool white wine.
